our fun packed weekend ended at The Fullerton Hotel.

The reason for the big celebrations this weekend was for Singapore's 45th birthday
and in the lead up to the BIG day on Monday August 9 we had some fabulous events to attend as seen in the following blog posts:



then along came MONDAY ...... Singapore's National Day which is held on August 9, in commemoration of Singapore's independence.

The Malaysian Parliament voted to expel Singapore from the Federation and Singapore became independent after separating from Malaysia.

The excitement in Singapore around this time of the year increases dramatically, flags are flying on all buildings and most cars as well. So much happening not only around the central area of Singapore, but also out in the Heartlands. No one misses out on any of the events or excitement.
 
we went to The Fullerton Hotel on Monday evening to have dinner with friends (Suzie and Rouben), some of the time was spent on the rooftop of the Hotel so we could see the sunset, the lights around us, the Padang, the Marina Bay Sands, the Parade, the fireworks and of course the Fly Past. The Hotel had set up two large screen TV's so we could see everything that was happening .... it really was a fabulous night, full of excitement and atmosphere.

 and back downstairs to The Lighthouse Restaurant for dinner.

Next dish, served on a flat piece of slate was Wagyu Beef Carpaccio, artichokes salad, fennel seed scented crispy pancetta.

Then came the Cream of Pumpkin and Ginger Soup, Taleggio cheese raviolini.

Next course was the Garganelli pasta with Wild Boar ragout, Tuscan Peccorino.

The main course was Slow cooked Wagyu beef cheek, soft rosemary polenta, roasted endive.

Another choice was Grilled John Dory Fillet, crushed potatoes (not mashed!!) and shallot cake. Saffron emulsion. (no photograph - sorry)
 
Dessert was a Hazelnut scented Tiramisu served in a tall glass which made it impossible to photograph!!

then we had tea and coffee which completed the meal with our dear friends, Suzie and Rouben, and as you can see we did have the best table in the house.

we did have a wonderful, fun packed weekend which we both enjoyed immensely and our dinner at The Fullerton finished it off nicely.

John flew off to Shanghai early on Tuesday morning - very tired!
