NOVUS - fine dining at it's best

Dining at Novus is an event as much as the meal. When you dine at Novus, there is more than enough time at the bar for a cocktail and relaxed conversation before making your way into the main dining area. According to the Novus website, to maintain the pristine standard of each dish, and to preserve the intimate ambiance of the restaurant, seating is limited to forty eight. Thus reservations are strongly recommended.  

Many people choose fine dining restaurants for a special occasion, so the food must not disappoint in either selection or quality. You don’t need to feature a huge menu, but it should be interesting, offering unique items that patrons wouldn’t find at any other restaurant and certainly an elegant atmosphere with high quality service.

We have eaten at a few 'fine dining' establishments in Singapore, many are well known and very popular, but I suspect more for their 'name' than their cuisine. I have always enjoyed the meals we have had at these restaurants, but after dining at Novus I can honestly say - it is fine dining at it's best.

heirloom tomato & prawn tempura
beef carpaccio
duck tea
summer truffle ravioli
ocean trout & summer truffle
crisp duck confit
black angus beef
snow cod & zucchini flower
snowball & white peach sorbet
valrhona chocolate test
verrine of nectarine, green tea & sauternes

each dish was freshly prepared from the freshest ingredients possible 
and this was evident in the first tasting of each of the courses.

nothing was to the extreme and it was served elegantly by attentive staff.

 Fine dining service goes far beyond taking an order and delivering food.

Chef Stephan Zoisl and his team make their mark serving a 
fine cuisine with an accent on modern European Dining.

I think fine dining is something special
a rare gift delivered by a talented chef and professional staff.

It's fantastic and it's elegant.
